Country Green Split Pea Soup with Bacon

Serves 8

3 Tbsp butter
1 large onion finely chopped
2 stick celery finely chopped
6 carrots finely chopped
2 cloves garlic finely chopped
500g Probrands split green peas
1.5 litre chicken stock
2 large potatoes - peeled and diced
250g bacon - cooked until crispy and chopped
Salt and pepper
Fresh thyme to garnish

Melt the butter, add onion, celery, carrots and garlic and sauté for 10 minutes until soft. Add the split peas and stock and simmer for 1 hour. When the peas are tender you can blend until smooth. Add
the potatoes and check seasoning - cook until the potatoes are soft. Ladle into bowls and top with crispy bacon and fresh thyme.
