Butterbean and Tuna Salad

Serves 4

1 small red onion
1 x 200g tin of tuna - drained
200g Probrands dried butterbeans
250g cherry tomatoes
3 Tbspn olive oil
1 tsp mustard
Juice of half a lemon
20g flat leaf parsley roughly chopped
1 x bag mixed lettuce leaves
Salt and pepper

Method
Soak dried butterbeans overnight in cold water. After soaking boil butter beans without salt (to prevent skins from going tough), until tender. Leave to drain and cool.
Slice red onion in half and slice and place in a bowl. Flake in the tuna, halved cherry tomatoes, butterbeans and lettuce. Whisk together the mustard, lemon and oil and dress the salad, check the seasoning and garnish with chopped parsley.
